Garlic Miso Butter Beans with Herb Oil & Sumac

Ingredients:


Herb Oil

  • 1/2 cup olive oil

  • 1/2 cup chives

  • 1/4 cup basil

  • 1/4 cup cilantro

  • 1/2 tsp cumin

  • 1/2 lemon (juice)

  • 1/2 tsp crushed red pepper

  • pinch of cayenne pepper

  • salt and black pepper to taste


Beans

  • 2, 15-oz cans of large butter beans (white lima beans)

  • 6 cloves garlic

  • 1 tsp olive oil

  • 1/2 cup water (adjusted to desired texture)

  • 1 tsp red miso paste (substitute with chicken or vegetable broth if needed)

  • 2 cups spinach


For Serving

  • toasted whole wheat bread

  • pinch of sumac

  • pinch of nigella seeds (optional)

  • julienned basil (optional)

  • shredded parmesan or nutritional yeast to taste (optional)


Directions:


1. Make the herb oil:

  • add olive oil, chives, basil, cilantro, cumin, and lemon juice to a blender or food processor; blend until smooth.

  • add crushed red pepper, cayenne pepper, salt, and pepper to taste; stir and set aside.

2. Make the beans:

  • add olive oil to a medium saucepan over medium heat.

  • while the oil is warming up, add miso paste to a separate small bowl and cover with hot or boiling water; stir miso and water until well incorporated; set aside.

  • once the oil is warm, add garlic to the saucepan; cook until fragrant and slightly golden (2 to 3 minutes).

  • add strained and rinsed beans to the saucepan, gently stir in the garlic; stir occasionally for 3 to 5 minutes, or until flavors are well-incorporated.

  • using a fork or the edge of a mixing spoon, mash 1/4 of the beans and gently stir to incorporate into the remainder of the bean and garlic mixture.

  • add miso broth to bean mixtures and gently stir, keeping majority of the beans in tact; cook for 2-3 more minutes and add water as needed to achieve desired texture.

3. Serve:

  • toast 4 pieces of whole wheat toast

  • transfer beans to serving bowls and drizzle with herb oil

  • sprinkle sumac, nigella seeds, basil, cheese or nutritional yeast, salt, and pepper to desired flavor


Notes:

  • sumac adds a bright, citrus flavor to balance the warmth and creaminess of the beans

  • add fried garlic on top of the beans for bonus crunch and savoriness

  • substitute with any white bean - cannellini beans are a great option

  • the herb oil works well with thyme, mint, and rosemary as well
